A multi-course Tamil Jaffna feast prepared in the villa kitchen by a local cook who specialises in the traditional cooking of the Northern Province. The cook consults with you in advance, adapts to dietary requirements, and sources ingredients from the Jaffna market on the morning of the dinner.
A typical dinner runs five to six courses: a light beginning of palmyra-based appetisers and chutneys, a soup course (typically a peppercorn-heavy rasam), a fish course prepared with the morning catch, one or two main curries (usually a crab curry if available, and a dry-fried mutton or chicken preparation), rice and accompaniments, and a sweet end of traditional sweets made from jaggery and rice flour.
The dinner is served in the villa courtyard or dining area and takes approximately two to two-and-a-half hours at a comfortable pace.
